I use a Mandolin to make this a quick side dish. Slice the carrots on the mandolin, then julienne them with a knife. Change up the seasoning for an Asian or Spanish inspired side dish.
Ingredients
1 head Cabbage, shredded
3-4 Carrots, julienned
1 small Red Pepper, julienned
1 small bunch Cilantro, chopped big
4-6 Green Onions, julienned
Asian Dressing
2 tablespoons Tamari or Soy Sauce
1 clove Garlic, crushed
1 tablespoon Ginger, crushed
2 tablespoons Roasted Sesame Oil
2 tablespoons Olive Oil
1 tablespoons Brown Rice Vinegar
1 tablespoon Balsamic Vinegar
1-2 tablespoons Sweet Chili Sauce
juice of 1 Lime
Spanish Dressing
4 tablespoons Olive Oil or 1/2 Olive Oil and 1/2 other lite veg oil
2 tablespoons Sherry Vinegar
1 tablespoon Balsamic Vinegar
1 clove Garlic, crushed
splash of Maple Syrup or Honey
1/2 teaspoon ground Cumin
1/2 teaspoon ground Mustard
1/2 teaspoon ground Fennel (grind up whole fennel in the spice or coffee grinder)
1/2 teaspoon Smoked Paprika
Sea Salt and Pepper
Saffron Pickled Onions
1 large Red Onion, sliced in half and then thin
pinch of Saffron and/or 1 tablespoon chopped fresh Turmeric or Powdered if necessary
1/4 cup Apple Cider Vinegar
1 teaspoon Coarse Sea Salt or Smoked Sea Salt
few grinds Black Pepper (this helps the bioavailability of the Turmeric)
big squeeze of Honey
Instructions
Toss all the Veg together and mix up either an Asian or Spanish Dressing by tossing the dressing ingredients together in a glass jar. Gently mix into the slaw. Top the Asian Slaw with Sesame Seeds or Toasted Pumpkin Seeds. Top the Spanish slaw with Saffron Pickled Onions.
Pickled Onions
Add the Saffron and Turmeric to about 1/2 cup of Boiling Water in a small bowl and let sit
Slice the onions
Bring the Vinegar and Salt to a gentle heat and add the Honey when slightly cool
Toss everything together and let the onions marinate as long as possible
Drain and toss into the Spanish Slaw
