You can play a lot with the ingredients here. Toss in green or black kalamata olives, feta or halloumi cheese or spicy rocket are all good additions.

  1. Boil the water and stir in the Quinoa, cover and simmer 20 minutes then toss into a shallow bowo and fluff with a fork
  2. Mix the Vinegar, Olive Oil and Seasoning in a jar and shake well. Season with Salt and Pepper
  3. When Quinoa is cool, toss gently with all the remaining ingredients
