Kale with Caramelized Onions

Use any kind of Greens for this quick cook side dish

Ingredients

Instructions

  1. Heat a small glug of Olive Oil or a tablespoon of Coconut Oil in a large shallow pan with a lid
  2. Toss in the Onions and cook over high heat about 3 minutes until just starting to brown
  3. Turn the heat down, sprinkle with a few grinds of Sea Salt and a pinch of Sugar
  4. Let cook about 10 minutes over low heat stirring occasionally
  5. Add the Garlic and turn the heat back up
  6. Toss in the rinsed Kale (with water clinging to the leaves)
  7. Give it a quick stir and cover, letting it steam for a few minutes
  8. Test a leaf, it should be tender to the bite and bright green (cooking time will depend on the freshness of the leaves)
  9. Turn the heat back up, stir everything around and give it a grind of Pepper before serving
