Use a food processor to make fast work of this meal. Roasting the spices is key to get great flavor in the Koftas.
Ingredients
2 tsp Coriander Seeds
2 tsp Cumin Seeds
handful of Cilantro, chopped
1 Lemon, Zested
4 cloves Garlic, peeled and sliced
3 Zucchini, shredded
2 cans Chick Peas, rinsed and drained
1-2 cups Oatmeal, ground fine in the Vitamix
Salt and Pepper
Instructions
Grate the Zucchini in a food processor and then transfer to a colander, sprinkle with salt and let sit
Toast the seeds in a dry pan for 3-4 minutes until fragrant, then smash them up a bit with the bottom of a can or mug
Add a splash of olive oil and toss in the lemon zest with a squeeze of juice and the garlic
Saute until the garlic is soft 2-3 minutes, add cilantro and blitz in the food processors a few pulses
Press the water out of the Zucchini and add it and the Chick Peas to the processor
Blitz a few minutes but keep it a bit coarse
Remove to a bowl and stir in just enough Oats to make a firm batter that can be shaped
You can refrigerate at this point
When you are ready to prepare, heat olive oil in a frying pan until very hot, shape the kofta into patties or logs and fry on all sides until golden brown, drain on paper towels and serve with sauces and Greek Salad
