Fast and flavorful. I use Baharat seasoning in this but you can use coriander and cumin too. Serve with a simple Lemon Tahini Sauce or Balsamic Glaze. Also good with Roasted Red Pepper Sauce
Ingredients
handful of shredded Zucchini
1 Onion or Shallot, chopped
2 cloves Garlic, chopped
1/2 of a Red Pepper, diced
1 box Canellini or other White Beans, rinsed
1-2 cups leftover cooked short grain Brown Rice
1/2 cup leftover Sweet Potato Fries, chopped (optional)
2 teaspoons ground Cumin
1 teaspoon ground Coriander
Juice and Zest of 1 Lemon
handful of Parsley, chopped
Smoked Sea Salt and Pepper
Instructions
Heat a splash of Olive Oil in a large frying pan
Saute Onions, Zucchini, Garlic and Red Pepper a few minutes until soft
Add the Cumin, Coriander, Salt, Pepper and Lemon Juice, Zest and Parsley
Remove from heat and toss in the Beans
Mash in the pan with a potato masher until well chunked up
Stir in the Rice and taste and adjust seasoning....it can take a bit more salt and lemon here
With wet hands, form into small or medium Patties, set aside on a cutting board or tray
Reheat the pan and add a generous splash of Olive Oil
When hot, fry the patties until golden brown on both sides over medium heat
Serve with Balsamic Glaze mixed with a bit of lemon juice or Lemon Tahini Sauce
