Mediterranean Bean Patties

Yield 4 -6 patties

Fast and flavorful. I use Baharat seasoning in this but you can use coriander and cumin too. Serve with a simple Lemon Tahini Sauce or Balsamic Glaze. Also good with Roasted Red Pepper Sauce

  1. Heat a splash of Olive Oil in a large frying pan
  2. Saute Onions, Zucchini, Garlic and Red Pepper a few minutes until soft
  3. Add the Cumin, Coriander, Salt, Pepper and Lemon Juice, Zest and Parsley
  4. Remove from heat and toss in the Beans
  5. Mash in the pan with a potato masher until well chunked up
  6. Stir in the Rice and taste and adjust seasoning....it can take a bit more salt and lemon here
  7. With wet hands, form into small or medium Patties, set aside on a cutting board or tray
  8. Reheat the pan and add a generous splash of Olive Oil
  9. When hot, fry the patties until golden brown on both sides over medium heat
  10. Serve with Balsamic Glaze mixed with a bit of lemon juice or Lemon Tahini Sauce
