This is a great, healthy, fast salad and leftovers are really good for lunch boxes.

Ingredients

Instructions

  1. Gently toss the cooled Quinoa with the Beans, Tomatoes, Onions and Corn with the dressing
  2. Garnish with toasted Tortilla Strips

DRESSING

  1. In Vitamix (yes you need one!) add all the ingredients and blend until smooth, taste and add more honey if it is too acidic.
