Soak overnight and slow cook, use the slow cooker or pressure cooker for beans in 20 minutes. For stovetop method, cover with Broth and cook over low 2-3 hours, then add Veg and cook 30 more minutes depending on how fresh the beans are.
Ingredients
1 pound Black Turtle Beans, rinsed
1 large Onion, chopped
1 Red Pepper, chopped
4 cloves Garlic, chopped
2 teaspoons Cumin Seeds
1 teaspoon Ground Cumin
Smoked Sea Salt
Pepper
4 cups Veggie Broth or 3 Broth Cubes
mild or hot Pepper, chopped (optional)
generous splash of Sherry Vinegar
Instructions
If using the pressure cooker, cover Beans with fresh water by 2 inches
Bring to pressure and turn off heat
Let pressure come down naturally while you saute all the Veggies in a swirl of Olive Oil
Add the spices to the Veg. When tender, splash in the Vinegar
Rinse the Beans and cover with Fresh Water and Broth Cubes, or Broth, then bring back to a boil
Bring to high pressure for 6 minutes
Release the pressure with a quick release method
Add the Veg, bring back to pressure for 2 minutes and release pressure
Season with Salt and Pepper
