Sweet Chili Roasted Yams

Yield 4 -6 Servings

Easy, sweet, spicy and melt in your mouth good. Use large Yams or Sweet Potatoes.

  1. Cut the Potatoes in half then into thirds so you have wedges
  2. Boil a large pot of water and drop in the Potatoes, cook 8-10 minutes. They should be firm still, drain
  3. Heat the oven to 210c or 425f
  4. Sprinkle some Olive Oil on one or two large baking sheets
  5. Put the baking sheet in the hot oven about 5 minutes
  6. Toss the Potatoes with the Chili Sauce and Soy Sauce mixture
  7. Remove the pans from the oven and toss on the Potatoes (be careful it will splatter)
  8. Leave plenty of room between the Potatoes, you want them to roast, not steam
  9. Return to the oven 12-15 minutes until well browned
  10. Sprinkle with chopped Cilantro and a squeeze of Lime
