Thai Salad with Spicy Peanut Dressing

Peanut Sauce keeps really well in the fridge so make a double batch. Add Grilled Chicken or Shrimp to the salad if you like

Instructions

  1. Toss the Vegetables in a large bowl
  2. Mix all the dressing ingredients in the Vita Mix or Blender until smooth, adding more water to make a dressing consistency if needed
  3. Serve the salad topped with seeds and dressing and a squeeze of lime
