Veggie Sausages with Sweet Potato Mash and Leeks

Super easy cheater weeknight dinner with good quality Veggie or Chicken Sausages.

Ingredients

Instructions

  1. Heat a large pot of water and bring to a boil
  2. Add the White Potatoes and boil 5 minutes, add the Sweet Potatoes and cook until both are soft
  3. (Alternatively, cook both with a bit of Veggie Broth in the Pressure Cooker about 7 minutes)
  4. Drain and let sit a few minutes
  5. Heat a splash of Olive Oil in a large skillet and when hot, sizzle the leeks 5-7 minutes until soft and beginning to brown
  6. Mash the Potatoes coarsley with the Cream like stuff, season with Sea Salt and Pepper
  7. Pile the Potatoes on a plate, top with the leeks and Sausages
