This week is a grab and go menu on steroids. It is hot and busy and cooking is not as enjoyable as usual. I seem to always need a meal to take somewhere or to eat on the go or have for friends. The Weekly Menu July 6-10 is really an epic success in using cross over ingredients and making several meals from one ingredient. You can grill up some fish or chicken to have on the side, but French Lentil Salad and Wild Rice and Roasted Almond Salad are both pretty substantial dishes on their own. They are filling, healthy and loaded with protein. You can make a big batch to take to a pot luck or just stick in the fridge and snack on all week. Balsamic Blooming Onions are amazing with Lentil Burgers and to toss into Stuffed Zucchini. Make a batch of Dips, cut up some Veggies and have meals, picnics and appetizers in minutes.
