Fresh Mint and Nectarine Salad

The dressing can be a bit sweet. You can cut down the balsamic and add a bit of white wine vinegar if you are using very sweet fruit.

Instructions

  1. Mix the Dijon, Honey and Vinegar together in a blender until smooth
  2. Slowly Drizzle in the Olive Oil and let it cream together
  3. Season with Salt and Pepper
  4. Add the Onion and whirl jut enough to stir it together
  5. Toss the Greens, Mint and Fruit together with a splash of dressing
  6. Top with toasted Nuts
