Fast healthy bean salad. I use boxed beans here but you can surely cook your own in the pressure cooker. You can add lots of different veg here. Olives, capers, artichokes are all good additions. I like to add Spinach for a more substantial salad course.
Ingredients
1 box White Beans, rinsed and drained
1 box Chick Peas, rinsed and drained
1 small Red Onion, chopped small
2 Carrots, chopped small
4 Artichokes in Water, drained, chopped
Handful of Fresh Parsley, chopped
10-12 Fresh Basil Leaves
3 Tablespoons Olive Oil
3 Tablespoons White Wine, Red Wine or Champagne Vinegar
juice from 1 Lemon
1/2 teaspoon Dijon Mustard
Sea Salt & Pepper
Prepared Pesto (optional)
Fresh Spinach Leaves (optional)
Instructions
Toss together the Beans, Veggies and Herbs in a large bowl
Whisk the Olive Oil, Vinegar, Lemon Juice and Mustard together
Toss dressing into the Beans and Herbs
Add a teaspoon or two of Pesto if you wish and season with Salt and Pepper to taste
