With a little prep ahead of time and some very clear labeling of ingredients, you can get this Italian Stir Fry on the table in a matter of minutes. Adding Beans boosts the protein, instead of just a noodle dish you can use lots of Veggies, Chickpeas or White Beans and Fresh Herbs to make a relatively healthy pasta dish. I add Veggie Sausages but you can toss in grilled Chicken if you like. Make a pan of Oven Roasted Rood Vegetables and put out some Tomato Pasta Sauce and Pesto or just dress it up with good Olive Oil and a splash of Balsamic Vinegar. A light grating of good Parmesan and chopped Herbs round out the flavors of this very versatile Italian Pasta Stir Fry. I let the kids add their own ingredients, heat it up in a Wok and it is ready to roll in 3 minutes flat….with only one pan to clean. This is my kind of weeknight meal!
INGREDIENTS TO PREP
- BOIL NOODLES-rinse with cold water, toss in a can of drained beans and bag it
- CHOP VEGGIES: Broccoli, Red Peppers, Onions, Broccoli, Zucchini, Mushrooms, Leeks or ROAST ROOT VEGETABLES AND COOL.
- ADD PROTEIN: Veggie Sausages or Grilled Chicken
Put Veggies in a Ziplock and Label. Put Sausages or Chicken in a separate container and label
When ready to serve: Heat a Wok or large pan to high and swirl in a bit of Olive Oil. Brown the Sausages for a few minutes then add sturdy Veggies, fry for a minute or two and add soft Veg (Broccoli, Zucchini). Toss in the Pasta and Bean Bag contents and stir until hot. Mix in Red Sauce, Pesto or just swirl with Olive Oil and Balsamic. Grind on Parmesan and top with Chopped Herbs.
