These Harissa Roasted Sweet Potatoes are quick, easy and oh so good. They also add a bit more fiber, beta-carotene and minerals than the average spud served with burgers. I use a store bought Harissa which is excellent, but you can make your own and it keeps well. I love Harissa over hummus, as a spicy addition to soups and as a kick for dips. I always have several jars in my pantry or homeade in the fridge or freezer.

make your own Harissa or use jarred
Ingredients
- 4-6 Sweet Potatoes or Yams, peeled and cubed or sliced like french fries
- 3-4 teaspoons Harissa or 3 teaspoons Olive Oil and 1 tablespoon dried Harissa Spice
Instructions
- Preheat oven to 400f or 200c
- Toss the Potatoes with the Harissa and gently mix
- Lightly oil a sheet pan and preheat it in the oven
- When hot, remove the pan and toss on the potatoes
- Roast 20-30 minutes until brown, turning once
