Pop some Sweet Potatoes, Yams and big plump Baking Potatoes in the oven, pull out all the Veggies in the fridge and give them a quick sauté with a splash of white wine and you have an amazing Make it Your Way-Baked Potato Bar. If you cut up some Veggies during the week this do it yourself dinner is quick and easy to toss together. Make extra potatoes (cook a bit less so they are firm) and toss them into baked potato salads for picnics or slice and bake on olive oiled cookie sheets for crispy fries. Take them to go with chipotle and sour cream or onion dip. Try sour cream or yogurt mixed with sweet chili sauce and twice baked sweet potato fries. Cube up the potatoes and make a salad with mustard vinaigrette, capers, hard boiled eggs and frozen peas. I pack my oven with spuds so I can use them up over the weekend.
