These Mediterranean Patties are a quick way to add some protein to a salad meal. The flavors are light but the patties are filling and flavorful. I keep a little jar of Baharat on hand to flavor all things Middle Eastern.You can buy it but it is simple to make and worth taking the time to mix this up as it makes the best tabbouleh ever and is a great seasoning for hummus and baba ganoush. These little Mediterranean Patties are quick to make and keep really well for lunch boxes. They use boxed beans, leftover sweet potatoes and leftover rice so are fast to toss together.
Mediterranean Bean Patties

Yield 4 -6 patties
Fast and flavorful. I use Baharat seasoning in this but you can use coriander and cumin too. Serve with a simple Lemon Tahini Sauce or Balsamic Glaze. Also good with Roasted Red Pepper Sauce
Ingredients
- handful of shredded Zucchini
- 1 Onion or Shallot, chopped
- 2 cloves Garlic, chopped
- 1/2 of a Red Pepper, diced
- 1 box Canellini or other White Beans, rinsed
- 1-2 cups leftover cooked short grain Brown Rice
- 1/2 cup leftover Sweet Potato Fries, chopped (optional)
- 2 teaspoons ground Cumin
- 1 teaspoon ground Coriander
- Juice and Zest of 1 Lemon
- handful of Parsley, chopped
- Smoked Sea Salt and Pepper
Instructions
- Heat a splash of Olive Oil in a large frying pan
- Saute Onions, Zucchini, Garlic and Red Pepper a few minutes until soft
- Add the Cumin, Coriander, Salt, Pepper and Lemon Juice, Zest and Parsley
- Remove from heat and toss in the Beans
- Mash in the pan with a potato masher until well chunked up
- Stir in the Rice and taste and adjust seasoning....it can take a bit more salt and lemon here
- With wet hands, form into small or medium Patties, set aside on a cutting board or tray
- Reheat the pan and add a generous splash of Olive Oil
- When hot, fry the patties until golden brown on both sides over medium heat
- Serve with Balsamic Glaze mixed with a bit of lemon juice or Lemon Tahini Sauce
