A basic pot of Black Beans with tender veggies and just the right amount of seasoning. I call this a Pot O Black Beans because you can use it for so many things. Fill tacos, make Black Bean Burgers, use in casseroles or just eat as a side dish. These are super fast to make in the pressure cooker or you can do the soak and cook for hours method. The slow cooker works too, but I find them a bit mushy this way.

Yield 6 servings
Soak overnight and slow cook, use the slow cooker or pressure cooker for beans in 20 minutes. For stovetop method, cover with Broth and cook over low 2-3 hours, then add Veg and cook 30 more minutes depending on how fresh the beans are.
Ingredients
- 1 pound Black Turtle Beans, rinsed
- 1 large Onion, chopped
- 1 Red Pepper, chopped
- 4 cloves Garlic, chopped
- 2 teaspoons Cumin Seeds
- 1 teaspoon Ground Cumin
- Smoked Sea Salt
- Pepper
- 4 cups Veggie Broth or 3 Broth Cubes
- mild or hot Pepper, chopped (optional)
- generous splash of Sherry Vinegar
Instructions
- If using the pressure cooker, cover Beans with fresh water by 2 inches
- Bring to pressure and turn off heat
- Let pressure come down naturally while you saute all the Veggies in a swirl of Olive Oil
- Add the spices to the Veg. When tender, splash in the Vinegar
- Rinse the Beans and cover with Fresh Water and Broth Cubes, or Broth, then bring back to a boil
- Bring to high pressure for 6 minutes
- Release the pressure with a quick release method
- Add the Veg, bring back to pressure for 2 minutes and release pressure
- Season with Salt and Pepper
