When I lived in Eastern Europe, Doner Kebab stands were everywhere. They were a bit sketchy in the hygiene department and there was always a mystery meat risk going on, but they consistently put out delicious Chicken Doner Kebabs you could grab on the go. They were stuffed with perfectly seasoned chicken wrapped around a soft, grilled bready wrap. They had the most amazing tomato sauce with just the right amount of spicy kick to it layered with a cool yogurt sauce. This version has no mystery meat, just organic chicken and you can even do this with strips of firm tofu. I added crispy spring greens, grilled onions and my version of the spicy tomato sauce. Serve with simple greek salad of chopped tomatoes, cucumbers and olives. In the UK I buy Crosta & Mollica Classic Piada Wraps. They are all natural and made with olive oil.

Yield 6 wraps
You can marinate these a little or a long time. Both have good results. Use strips of firm tofu if you want to make a Veggie version.
Ingredients
- MARINADE
- 4 Organic Chicken Breasts, cut into 1 inch thick strips (or Firm Tofu)
- 3 tablespoons Olive Oil
- 1 Lemon, juiced
- 4 cloves Garlic, peeled and smashed up
- 1 teaspoon Oregano
- 1 tablespoon Balsamic Vinegar
- WRAPS
- Mixed Spring Leaf Lettuce
- 1 large Red Onion, cut into quarters
- 6 Flatbread Wraps or Tortillas
- TZATZIKI SAUCE
- 1/2 cup Plain Greek Yogurt
- 1/4 cup Cucumber, grated and water squeezed out
- juice from 1/2 Lemon
- 1 teaspoon Olive Oil
- 1/2 teaspoon Greek Seasoning (or a shake of Oregano, Garlic Salt and Pepper)
- CHILI SAUCE
- 1 large Onion, minced
- 1 box Crushed Tomatoes
- 1/4 cup Brown Sugar
- 1/4 cup Apple Cider Vinegar
- 1/2 teaspoon each: Cinnamon, Chili Powder, Ground Cloves, Red Chili Flakes
- Salt and Pepper to taste
Instructions
- Mix marinade ingredients together and pour over the chicken or tofu
- Let marinate for as long as you have
- Mix the Tzatziki ingredients together in a small bowl
- Add all the Chili Sauce ingredients together in a saucepan and cook over low heat 15-20 minutes or longer until it thickens
- Grill the Chicken under the broiler or on a grill pan about 4 minutes each side until seared and no longer pink in the middle
- Grill the Onions until soft and slightly charred
- Heat the Wraps in a dry pan or over a grill or open burner until warm and slightly charred
- Wrap a few pieces of Chicken with the Greens and a few pieces of Onion in the warm bread
- Serve with both Sauces
