Instant Pot Pulled Chicken Tacos

Fast, tender chicken for tacos, salad and sandwiches
Ingredients
- 1.5 pounds Boneless Chicken Thighs or Breasts
- 2 Tablespoons Smoked Paprika
- 1 teaspoon ground Fennel (whirl it up in a magic bullet or blender or coffee bean grinder)
- 1 teaspoon ground Cumin
- Salt and Pepper
- Olive Oil
- 1 can Tomatoes (chopped or whole)
- 1 Red or White Onion, chopped rough
- 1/2 cup Chicken Broth or Water
- 6 cloves Garlic, peeled and chopped rough
TOPPINGS:
- Avocados
- Grated Cheese
- Sour Cream
- Salsa
- Cilantro
- Hot Peppers
- Pickled Red Onions (recipe follows)
Instructions
- Use the Sauté function to heat a generous splash of Olive Oil
- Sprinkle the spices on a plate
- Dip each piece of Chicken in the spice mixture and transfer to the hot oil
- Brown in batches just a few minutes on each side and return all the meat to the cooker
- Add the remaining ingredients and switch to manual mode
- Lock the pressure valve and dial 11 minutes on the cook time
- Let pressure come down naturally
- Use forks to pull Chicken apart
- Serve in Tortillas as tacos or in Crusty Rolls for Mexican Bocadillo sandwiches
