Another Friday night do it yourself meal saved by Mexican inspiration again. Nachos are usually greasy, fat laden gut bombs you eat at the bar when you want to kill your buzz. But you can set out all the right stuff to make these Make it Your Way Nachos, healthy, flavorful and still feel like you indulged just a bit. I always feel really full and satisfied, not bloated when I can make Nachos just the way I like them. I pile up baked tortilla chips with lots of beans, a tiny bit of cheese, loads of Salsa and Avocados and hot, hot, peppers. Bake Corn Tortillas in a hot oven with a sprinkle of salt until they are crispy to avoid the trans fat laden bagged chips. Let everyone pile up their tortillas with Beans, Chicken and Cheese. Pop it under the broiler until the cheese is melted and pile on the fresh toppings.
Make it Your Way Nachos
Ingredients
- Corn Tortilla Chips (you can bake corn tortillas in the oven)
- Sharp Cheddar or Jack Cheese
- Leftover Chili or Pinto Pot Beans or Canned Beans with a bit of Cumin & Chili Powder
- Diced Cooked Chicken
Toppings:
- Salsa or Chopped Tomatoes and Cilantro
- Guacamole or Avocados
- Chopped Green Onions
- Sour Cream
- Sliced Black Olives
- Hot Peppers
- Shredded Cabbage
Instructions
- Layer Chips on an oven proof pan or plate
- Let everyone load their choice of ingredients
- Grill under the broiler for 2-3 minutes
- Top with your choice of toppings
