Friday night is usually Make it Your Way Pizza at my house. The kids and friends are always coming and going at different times, so on Fridays I lay out a load of ingredients and let everyone make their own pizza or other Make it Your Way idea I might get during the week……. Make it Your Way Chef Salad, Make it Your Way Stir Fry…..o.k. yes I feel like a Mongolian Chef, but the kids actually cook it up themselves now that I stocked up on a few Woks. We also do Make it Your Way Taco Bar, but Make it Your Way Sushi is really the best. I make a big pot of Sushi Rice, a pot of Quinoa and cover them with a damp towel. They keep well and everyone can put what they want in their rolls. I put out smoked salmon and tofu along with lots of different Veg and all the goodies that go with it. Wasabi, Pickled Ginger and Saki…for me.
Make it Your Way Sushi

Yield 6 -8 rolls
Try a variety of Veg, just slice them thin and don't overstuff the rolls.
Ingredients
- 2 -4 cups Sushi Rice or Short Grain Brown Rice
- 1-2 cups Quinoa
- Veg sliced in matchsticks: Carrots, cooked Beets, Cucumber, Avocado, Daikon Radish
- Protein: Cooked Tofu, Shrimp, Smoked Salmon, Fried Egg
- Sushi Seasoning or Mirin and Rice Wine Vinegar
Instructions
- Rinse the grains well and cook in a rice cooker or pot with tight fitting lid
- Use just a bit more than double the amount of water than grain
- Quinoa and Sushi Rice will take 20 minutes Brown Rice will take 45
- Spread in a shallow bowl to cool then toss with 1/4 cup Sushi Rice Seasoning or Mirin and Rice Wine Vinegar mixture
- Cover with a damp tea towel to keep moist and let everyone roll their own sushi
