Still looking for a bit of cold weather comfort food but optimistic about Spring. This week’s menu has warm, deep comforting food with lots of fresh veggies and Spring Greens. Store bought Veggie Sausages makes a fast weeknight meal while Winter Pot Pie provides lots of leftovers for an easy cook week.

MONDAY: A warming Veggie Pot Pie starts off the week. You can do a lot of the prep for this dish over the weekend and it provides lots of leftovers for lunches.
TUESDAY: Mushroom or Turkey Meatballs with Polenta or Pasta and Oven Roasted Broccoli
WEDNESDAY: Very Veggie Day with Grilled Miso Asparagus, Roasted Carrots, Roasted Beet Salad and Easy Veggie Sausage and Mash
THURSDAY: A big pot of Red Beans and Rice heading into the weekend. The leftovers make a wonderful spicy soup for a quick weekend meal or Lunchbox. Add Pumpkin Cornbread and Sautéed Kale for a great taste of the Bayou.
FRIDAY: Make it your way Stir Fry Bar. Whip up some healthy sauce and let everyone pick their own ingredients.
