Mojo Sauces

Mojo sauces are great to dip Wrinkled Potatoes, French Fries or Grilled Chicken in
Ingredients
- Red Mojo
- 2 large Red Peppers, roasted and peeled (or in a Jar, rinsed)
- 1 tablespoon Balsamic Vinegar
- 1/2 cup Oat or Soy Cream or Creme Freche
- 1/2 teaspoon each: Ground Cumin, Smoked Paprika, Smoked Sea Salt
- 1 clove Garlic, chopped
- Green Mojo
- 1 handful rinsed Spinach
- 1 large bunch Cilantro (stems included)
- 2 tablespoons Sherry Vinegar (the good quality kind)
- 1/2 Green Pepper, chopped
- 3 cloves Garlic, chopped
- juice from 1/2 Lime
- Sea Salt and Pepper
- 1 hot Pepper (to taste)
Instructions
- For both the Sauces, whirl everything together in the Vita Mix
- With the blade running, drizzle in just enough Olive Oil to make a nice sauce consistency
- Adjust seasoning with a dash of sugar if it is too acidic
