This Caribbean Mango and Pineapple Salsa comes together fast with a few whirls of the Vitamix. Ginger gives it a kick of flavor while Avocados add a rich creaminess in every scoop. Serve it up with fresh Veggie dippers, Corn Chips, Baked Vegetable Chips or Pita Chips. It is great on top of Caribbean Black Beans and Coconut Rice.
Caribbean Mango, Pineapple Salsa

A really great salsa to serve with Caribbean cuisine. Add hot peppers to taste
Ingredients
- 2 cups fresh Pineapple, chopped
- 1 Mango, peeled and cubed
- 1 clove Garlic, chopped
- 1/2 small Red Onion, chopped
- 1 small handful Cilantro, chopped
- 1 teaspoon fresh Ginger, chopped
- juice of 1 Lime
- 1 small hot or mild Pepper, chopped, seeds removed for less heat
- Sea Salt and Pepper
- 1/2 Avocado, diced fine
Instructions
- Mix everything in the Vitamix except the Avocado
- Whirl on lowest speed two or three times or chop fine and combine
- Add the Avocado and stir gently
- Adjust with more Lime Juice and Salt and Pepper
