You can play a lot with the ingredients here. Toss in green or black kalamata olives, feta or halloumi cheese or spicy rocket are all good additions.
Ingredients
- 11/2 cups Quinoa, rinsed well
- 3 cups Water
- 1 small Red Onion, sliced thin
- 1 English Cucumber, chopped
- 10-12 Cherry Tomatoes, halved
- Green Olives or Kalamata, pitted and halved
- Feta or Halloumi Cheese, cubed (optional)
- handful of Italian Parsley, chopped
- handful of Mint, chopped
- 1/4 cup Red Wine Vinegar
- 1/4 cup Olive Oil
- 1/2 teaspoon Greek Seasoning
Instructions
- Boil the water and stir in the Quinoa, cover and simmer 20 minutes then toss into a shallow bowo and fluff with a fork
- Mix the Vinegar, Olive Oil and Seasoning in a jar and shake well. Season with Salt and Pepper
- When Quinoa is cool, toss gently with all the remaining ingredients
