I love May….more specifically, Cinco de Mayo. It is an excuse to eat as much Mexican food as I can possibly make in one day. I have lightened up the saucy, cheesy Tex Mex that so many Americans think is good ‘ol Cinco de Mayo fodder and gone for a Vegetarian Green Enchilada and a Red Enchilada Chicken Version. Paired with Elena’s Perfect Pinto Beans, a Minty Margarita and Salsa Cruda, everyone is happy. Whip up some Roasted Sweet Corn or Pea & Lime Guacamole to top it off. It is hard to find healthy (relatively) tortillas in the UK. The Cool Chili has good corn tortillas and dried chilis. Mex Grocer carries red and green enchilada sauce (but it is by no means what I would call healthy). They also have flour tortillas but I just use corn. You can whip up a fast red or green enchilada sauce for these if you like. As much as I would like to eat Mexican everyday I have thrown in a few International inspired recipes, jut to keep my perspective worldly.
