I discovered this amazing twist to traditional guacamole while I was cooking for a Collegiate Cycling Team. I had a pretty tight budget to feed 20 hungry cyclists for a week. I had to literally hide the avocados and ration the guacamole. I decided to sneak some peas into the guac to to make the avocados go further. The result was a surprisingly creamy and sweet concoction and Sweet Pea and Lime Guacamole was born. They all raved about how good it was and I didn’t even tell them it had peas in it. It is quick to make, taste fresh and lighter in calories so you can eat a lot of it. It is a great dip with veggies or baked corn tortillas or an addition to anything Mexican.
Sweet Pea & Lime Guacamole

Yield 2 cups
Easy, light and fresh. I use Simply Organic Guacamole mix but you can improvise your own spices just as well
Ingredients
- 1 small Onion or Shallot, peeled, chopped
- 1 clove Garlic, peeled
- 1 cup frozen Sweet Peas, thawed (cover with boiling water, then drain)
- juice of 1 Lime
- 1 large ripe Avocado, peeled and halved
- 1 tablespoon Simply Organic Guacamole Seasoning or 1/2 tsp. each: Cumin, Coriander, Smoked Sea Salt, Pepper
Instructions
- Whirl everything in the food processor until it is the consistency you like...smooth or a bit chunky
