Italian White Bean Salad

Fast healthy bean salad. I use boxed beans here but you can surely cook your own in the pressure cooker. You can add lots of different veg here. Olives, capers, artichokes are all good additions. I like to add Spinach for a more substantial salad course.
Ingredients
- 1 box White Beans, rinsed and drained
- 1 box Chick Peas, rinsed and drained
- 1 small Red Onion, chopped small
- 2 Carrots, chopped small
- 4 Artichokes in Water, drained, chopped
- Handful of Fresh Parsley, chopped
- 10-12 Fresh Basil Leaves
- 3 Tablespoons Olive Oil
- 3 Tablespoons White Wine, Red Wine or Champagne Vinegar
- juice from 1 Lemon
- 1/2 teaspoon Dijon Mustard
- Sea Salt & Pepper
- Prepared Pesto (optional)
- Fresh Spinach Leaves (optional)
Instructions
- Toss together the Beans, Veggies and Herbs in a large bowl
- Whisk the Olive Oil, Vinegar, Lemon Juice and Mustard together
- Toss dressing into the Beans and Herbs
- Add a teaspoon or two of Pesto if you wish and season with Salt and Pepper to taste
