Yes, I turned another bean into a veggie burger. Technically lentils are not beans, but they make an awesome base for veggie burgers all the same. My standard veggie burger concoction of mashed beans, oats and veggies did not disappoint in this version. You can serve this Lentil Burger on a Quick Burger Bun with all the burger toppings, but it is so good you can pull it off with just some greens, avocado, tomato and Balsamic Blooming Onions. Roasted Red Pepper Sauce is great on these too. You can make mini ones and serve them cold in a picnic with chili ketchup or mustard to dip.

Yield 6 patties
Any kind of Veggies work well in this. You can use canned Lentils, but I plan this to have leftover lentils already cooked. Fry on the stovetop or bake in the oven
Ingredients
- 2-3 cups cooked Lentils
- 2 cups diced Veggies:
- Carrots
- Red Peppers
- Onions
- Celery
- 3 tablespoons Ketchup or Tomato Sauce
- 1 tablespoon Dijon Mustard
- 2 tablespoons Soy or Tamari Sauce
- 2 cups Oats
- 1 Egg (optional)
- 1 teaspoon ground Cumin
- Smoked Sea Salt and Pepper
Instructions
- Saute the Veggies in Olive Oil until tender
- Whirl one cup Lentils in the Vitamix with the Ketchup, Mustard and Soy Sauce until smooth
- Mix the Veggies, Cumin, Salt and Pepper with the whole Lentils, whirled Lentils and the Oats together in a large bowl
- You can add an Egg is you like
- Add more Oats if it is too soft
- Let sit about 10 minutes to firm up
- Form into Patties and Fry in Olive Oil or brown briefly and finish cooking in a 400f or 200c oven for 20 minutes until they are browned and hot in the middle
