So I got a little too organized with food planning last week. I made up this week’s menu with a shopping list, titled and filed it. Took all the food pictures and was ready to post but when I went to edit it I forgot I had already done it, didn’t recognize the dates and replaced the Weekly Menu February 1-5 with last week’s. So moral of the story. Too much organization makes one cray, cray and disorganized. Again, lots of pre-making and planning on the weekend sets you up for super quick and healthy weeknight dinners. White Bean Chili and Caribbean Black Beans can both be made quick like in the pressure cooker or use canned beans for even quicker prep. Jerk Chicken Tay Bakes are fast to assemble and ready to bake. Baked Potatoes with Chardonnay Vegetables are so easy they actually don’t even deserve a recipe page. Tuscan Minestrone Soup is a staple in my freezer these days as you can make a huge batch and it freezes wonderfully. Serve it up with crusty bread and a drizzle of really good olive oil. Friday night is Pizza night….again. I just can’t think of anything better to use up all the leftover veg. This week we folded them over and called it Calzone night. Have a great week….eat healthy….fast….delicious meals all week long.
