This recipe is version of Jamie Oliver’s Vegan Kofta but is gluten free. Toss together a quick Greek Salad, some side sauces, pitas and you have a Greek inspired feast. You can make the Kofta mix and sauces ahead of time for a quick prep dinner. I make Turkey Patties for the meat eaters. They have crossover ingredients so it is a snap to make a meal everyone can eat.
Koftas with Greek Salad and Sauces

Use a food processor to make fast work of this meal. Roasting the spices is key to get great flavor in the Koftas.
Ingredients
- 2 tsp Coriander Seeds
- 2 tsp Cumin Seeds
- handful of Cilantro, chopped
- 1 Lemon, Zested
- 4 cloves Garlic, peeled and sliced
- 3 Zucchini, shredded
- 2 cans Chick Peas, rinsed and drained
- 1-2 cups Oatmeal, ground fine in the Vitamix
- Salt and Pepper
Instructions
- Grate the Zucchini in a food processor and then transfer to a colander, sprinkle with salt and let sit
- Toast the seeds in a dry pan for 3-4 minutes until fragrant, then smash them up a bit with the bottom of a can or mug
- Add a splash of olive oil and toss in the lemon zest with a squeeze of juice and the garlic
- Saute until the garlic is soft 2-3 minutes, add cilantro and blitz in the food processors a few pulses
- Press the water out of the Zucchini and add it and the Chick Peas to the processor
- Blitz a few minutes but keep it a bit coarse
- Remove to a bowl and stir in just enough Oats to make a firm batter that can be shaped
- You can refrigerate at this point
- When you are ready to prepare, heat olive oil in a frying pan until very hot, shape the kofta into patties or logs and fry on all sides until golden brown, drain on paper towels and serve with sauces and Greek Salad
Nutty Tahini Sauce & Easy Tzatziki

These sauces are easy to make, keep well and go great with Greek or Middle Eastern dishes
Ingredients
- Nutty Tahini Sauce
- ------
- 1 Onion, sliced
- 2 cloves Garlic, peeled and sliced
- 1 tsp, Ginger, chopped
- a bit of fresh Chili, chopped (optional)
- handfull of Raw Cashews
- 2 Tablespoons Tahini
- 1 cup Coconut Milk
- 1 Lemon or Lime, juiced
- Splash of Rice Vinegar
- Salt and Pepper
- ----
- Easy Tzatziki
- -----
- 11/2cup Greek Yogurt
- 1 fresh Lemon, Squeezed and Zested
- 2-3 Tablespoons fresh Mint
- 2 cloves Garlic, pressed
- Salt and Pepper
Instructions
- NUTTY TAHINI
- Saute the Onion, Garlic and Pepper in a splash of olive oil until soft, add the cashews and cook until everything is nicely browned
- Transfer to the Vitamix and add the remaining ingredients
- Whirl until smooth and adjust seasonings

- Mix all the ingredients together
Greek Salad
Ingredients
- chopped Cucumbers
- chopped Tomatoes
- chopped Feta Cheese
- chopped Red Onion
- Greek Olives
- Red Wine Vinegar
- Olive Oil
- handful of chopped Parsley
- Fresh or Dried Oregano
Instructions
- Toss the all the veg and together with a splash of Olive Oil and Red Wine Vinegar
- Top with Parsley, Oregano and chopped Feta Cheese
